1 1/4 cup plain flour
3/4 cups almond flour
tsp baking powder
1 cup sugar

1 cup plant milk
tbsp apple cider vinegar
2 tsp vanilla extract
1/4 cup veg oil


1 x 270ml vegan double cream
3 tbsp icing sugar
1/2 tsp vanilla

mix dry ingredient (flour, almond flour, baking powder, sugar). In a separate bowl mix wet (milk, vinegar, vanilla, oil), mix may circle slightly but that’s fine! combine wet with the dry and bake for 40 mins, 160c fan (or until golden).

whisk cream, sugar and vanilla together with electric whisk until soft peaks. spread  onto cooled cake and top with strawberries.
