INGREDIENTS:

1 cup of chopped pineapple
1 cup of shredded coconut
3 eggs
1 cup + 2 tablespoons of sugar
½ cup unsalted butter 1 tsp baking powder
1 pinch of salt
1 ½ tsp vanilla
1 ½ cup flour
¼ cup pineapple juice
¾ cup coconut milk
¼ cup

Malibu *Frosting

3 to 4 tablespoons coconut cream 2 cups of powdered sugar
¼ cup unsalted butter
1 stick of cream cheese
¼ tsp coconut extract

PREPARATION MODE

1- Mix the coconut milk, juice, vanilla and rum separately.

2- In another container mix the dry ingredients.

3- In the blender cream the sugar with the butter. Add the eggs one by one.

4- Add the flour mixture alternating with the liquids until you finish with flour.

5- Add the coconut and pineapple and mix in an enveloping way with a spatula.

6- Fill the cupcake mold and bake at 350º C for approximately 18 to 28 minutes.

7- Meanwhile prepare the frosting, cream the butter with the cream cheese, add the sugar, mix, then the coconut cream and extract. mix well
