
ingredients:
-150g (1 1/2 cups) oat flour (oats blended)
-75g (6 tbsp) coconut sugar (add more if needed)
-60g (1/4 cup) smooth peanut butter (nut butter)
-1 egg or flax egg=(1 tbsp flax meal + 2 1/2 tbsp water…let it sit for 10 min)
-1 tsp baking powder
-55g (1/2 cup) milk of your choice (add more if needed…depends on ur oat flour)
-75g (1/4 cup) jam
(I used a homemade strawberry jam with coconut sugar, so u want a recipe? 🙂
toppings:
-(Greek) yogurt (optional) (I used a dairy free version)
-jam (I used homemade strawberry jam)
-peanuts
how to:
-preheat the oven to 350˚F (180 C)
-mix all the wet ingredients together until really smooth
-then bit by bit add in the dry ingredients & fold them under (gently stir together)
-grease an 12cm•21cm baking pan (or any baking pan you have) with coconut oil or cooking spray
-pour the batter in the baking pan; make sure it’s evenly spread(ed)
-bake for about 25-35 minutes or until completely baked through (stick a toothpick in to see if it comes out clean)
tip: in case the top starts to get brown just lay a parchment paper on top or turn the heat down
-let it cool down completely before removing from the baking pan
-then add a thick layer of (Greek) yogurt (optional)
-and on top of that a layer of your fav jam 🙂
-sprinkle some peanuts on top & enjoy!
