ngredients :

  • 4 eggs
  • 300ml castor sugar
  • 500ml (2cups) cake flour
  • 15ml (1Tbs)baking powder
  • 250ml (1cup) milk
  • 100g butter 
  • 5ml (1tsp)lemon essence
  • 2 Tbs poppy seeds
  • Zest of 1 lemon 

Method:

Preheat oven to 180°c

Beat eggs and sugar together until light and fluffy.

Sift flour and baking powder together and fold in egg and sugar mixture.

Heat milk, butter and lemon essence. (Do not boil)

Add to mixture and continue to mix.

Fold in poppy seeds and lemon zest.

Pour ¾ full into muffin pan or cupcake holders.

Bake at 180°c for 20 minutes.

Do a tooth pick test to make sure it’s cooked inside.

Remove and allow to cool on a wired rack.

Lemon drizzle

  • 1 cup Icing sugar
  • 1 tsp lemon essence
  • A few table spoons water until you have a runny consistency.

Add above mentioned ingredients together and & drizzle over Muffins by using a spoon.

Sprinkle with lemon zest and poppy seeds.
