An amazingly moist cake covered in cream cheese frosting. A perfect use for brown bananas!



1/2 cup butter, softened

2 cups sugar

3 eggs

1 1/2 cups bananas, mashed

1 tsp vanilla

2 cups flour

1 tsp baking soda

pinch salt


1/2 cup butter

1 250g package cream cheese, softened

2 cups icing sugar (powdered sugar)

1 tsp vanilla


1.Preheat oven to 350F. Grease a 9Ă—13 baking pan and set aside.

2.In a large bowl, beat butter and sugar until combined. Add eggs, bananas and vanilla and beat until combined.

3.In another bowl, stir together flour, baking soda and salt. Add to wet mixture and stir to combine.

4.Pour into prepared baking pan. Bake for 45 minutes or until a toothpick comes out cleanly from the centre. Cool.

Cream Cheese Frosting:

1.Beat butter and cream cheese together until smooth. Gradually add in icing sugar and vanilla. Beat until smooth. Spread over cooled cake.
