San Sebastian Cheesecake
2 1/2cups powdered sugar
3 tbsp flour
1 tbsp corn starch
400 g cream cheese
400 g sour cream
400 g heavy whipping cream
180 g mascarpone
1 tbsp vanilla
Preheat the oven 400F.
Lightly grease a 9 inch springform pan, and layer with parchment paper.
İn a small bowl whisk the flour and corn starch. Set aside
Using a electric mixer or stand mikser, beat powdered sugar and egg until fluffy for about 4 min.
In a large mixing bowl, put the room temrerature cheese and sour cream and mix until the mixture is smooth and creamy.
Add the heavy whipping cream, vanilla and mascarpone and mix well.
Add egg and stir well. And finally sift in flour mixture and fold it into the batter until combined.
Pour the cheesecake batter into the prepared pan. Bake 27-30 min.
Put the oven into broil and broil the cheesecake until top has burn to the color in the photo, only for 30- 40 sec. ( the cake is ready but the center will still be quite jiggly.
Remove from the oven and cool.
Chill in the refrigerator for at least 6-7 hours or overnight.
İf you prefer you serve with chocolate ganache.
